INGREDIENTS:
4 salmon steaks, good quality, about 1-inch thick

Marinade:
1/4 cup soy sauce or tamari
1/4 cup cooking sherry
1 tablespoon fresh lemon juice plus 1/2 teaspoon zest
1 small clove garlic, crushed and minced
3 tablespoons olive oil

PREPARATION:
Arrange fish in a shallow, non-reactive dish. Whisk together marinade ingredients in a small bowl; pour over steaks. Cover and refrigerate for 1 to 1 1/2 hours, turning frequently. Place fish on a well-greased grill or grilling basket and grill over medium coals for about 3 to 4 minutes, basting frequently with marinade.

Turn and cook for 3 to 4 minutes longer, or until fish is nicely grilled on the outside but still pink in the center./ southernfood.about.com

INGREDIENTS:

2 lbs any whole small fish or filets
1 lime
1/4 cup flour, seasoned with salt and pepper
oil for frying

Sauce:
1 cup white or cider vinegar
1 cup water
A pinch of salt; pinch of sugar
1 cup julienned strips of carrot and chocho (chayote)*
1 hot pepper, such as Scotch Bonnet, cut in rings
1 large onion, cut in rings
6 pimento (allspice) berries

PREPARATION:

After you have washed fish, squeeze lime into rinse water to reduce fishiness. Dust with flour and fry. Set aside.

Boil together water, vinegar, sugar and salt. Add the remaining ingredients and cook briefly. Pour sauce over fish and leave to marinate in the refrigerator 4-24 hours before serving./www.eatjamaican.com

2 lb boneless grouper
1 med onion, chopped
2 x ribs celery, chopped
1 med bell pepper, minced
2 med chopped potatoes
4 cups diced tomatoes
5 cups fish stock
1/2 tsp thyme
1/2 tsp allspice
1 x Scotch Bonnet pepper
1 x bay leaf

1 tbsp lime juice
1 tbsp seasoning salt
Salt and pepper to taste

Method:
Dice the fish into approximately 1/2 inch pieces and place in mixing bowl Marinate with lime and spices and place in fridge for 2-3 hrs Bring fish stock to a boil. Add all ingredients and simmer for 1 hr, stirring occasionally

Cooking Time: 1 hr
